Ingredients:
For the Lamb Tagine:
- 1 kg lamb shoulder, cut into 2-inch chunks

- 1 large head of cauliflower, grated into couscous-sized pieces

- Zest of 1 lemon
- Juice of 1/2 lemon
Instructions:
- Prepare the Lamb Tagine:
- In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the lamb chunks, seasoning them with salt and pepper, and brown on all sides. Remove the lamb and set aside.
- In the same pot, add the onion and garlic, cooking until soft. Stir in the cumin, coriander, cinnamon, and cayenne pepper, cooking for another minute until fragrant.
- Return the lamb to the pot. Add the orange zest, orange juice, and broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 1.5 to 2 hours, or until the lamb is tender.
- Stir in the olives, cilantro, and parsley just before serving.
- Prepare the Cauliflower Couscous:
- Heat olive oil in a large skillet over medium heat. Add the grated cauliflower, seasoning with salt and pepper. Cook for 5-7 minutes, or until the cauliflower is tender but not mushy.
- Remove from heat and stir in lemon zest and lemon juice.
