Keto Deviled Eggs
Ingredients:
- 6 large eggs
- 1/4 cup mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon white wine vinegar
- Salt and pepper to taste
- Paprika for garnish
- Fresh chives, chopped, for garnish (optional)
Instructions:
- Boil the Eggs: Place the eggs in a saucepan and cover with water. Bring to a boil, then reduce the heat and simmer for 10 minutes. Remove from heat, drain, and cool the eggs in ice water.
- Peel the Eggs: Once cooled, peel the eggs and cut them in half lengthwise.
- Prepare the Filling: Remove the yolks from the egg whites and place them in a bowl. Mash the yolks with a fork, then add mayonnaise, Dijon mustard, white wine vinegar, salt, and pepper. Mix until smooth.
- Fill the Egg Whites: Using a spoon or a piping bag, fill the egg whites with the yolk mixture.
- Garnish: Sprinkle a bit of paprika over the top of each deviled egg, and garnish with chopped chives if desired.
- Chill and Serve: Chill the deviled eggs for at least 30 minutes in the refrigerator before serving.
