For the Blueberry Jalapeño Coleslaw:
- 200g shredded cabbage
- 50g fresh blueberries
- 1 jalapeño, finely minced
- 2 green onions, thinly sliced
- 3 tablespoons keto-friendly mayonnaise
- 2 tablespoons apple cider vinegar
- 1 teaspoon erythritol or other keto-friendly sweetener
- Salt and pepper, to taste
Instructions:
- Marinate the Steaks: Combine the olive oil, garlic, chili powder, smoked paprika, salt, and pepper. Rub the mixture over the steaks and let marinate for 1 hour or overnight.
- Prepare the Coleslaw: Mix shredded cabbage, blueberries, jalapeño, and green onions. Whisk mayonnaise, vinegar, erythritol, salt, and pepper and combine with cabbage. Chill for 30 minutes.
