The lamb is tender and infused with spices and a hint of citrus to bring brightness to the dish, while the cauliflower couscous offers a low-carb alternative to traditional grains.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Ingredients:<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>For the Lamb Tagine:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 kg lamb shoulder, cut into 2-inch chunks<\/li>\n\n\n\n<li>2 tablespoons olive oil<\/li>\n\n\n\n<li>1 large onion, finely chopped<\/li>\n\n\n\n<li>3 garlic cloves, minced<\/li>\n\n\n\n<li>1 teaspoon ground cumin<\/li>\n\n\n\n<li>1 teaspoon ground coriander<\/li>\n\n\n\n<li>1\/2 teaspoon ground cinnamon<\/li>\n\n\n\n<li>1\/2 teaspoon cayenne pepper<\/li>\n\n\n\n<li>Salt and pepper to taste<\/li>\n\n\n\n<li>Zest of 1 orange<\/li>\n\n\n\n<li>Juice of 1 orange<\/li>\n\n\n\n<li>1 cup beef or lamb broth<\/li>\n\n\n\n<li>1\/2 cup green olives, pitted<\/li>\n\n\n\n<li>A handful of fresh cilantro, chopped<\/li>\n\n\n\n<li>A handful of fresh parsley, chopped<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>For the Cauliflower Couscous:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 large head of cauliflower, grated into couscous-sized pieces<\/li>\n\n\n\n<li>1 tablespoon olive oil<\/li>\n\n\n\n<li>Salt and pepper to taste<\/li>\n\n\n\n<li>Zest of 1 lemon<\/li>\n\n\n\n<li>Juice of 1\/2 lemon<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">Instructions:<\/h4>\n\n\n\n<ol class=\"wp-block-list\">\n<li><strong>Prepare the Lamb Tagine:<\/strong>\n<ul class=\"wp-block-list\">\n<li>In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the lamb chunks, seasoning them with salt and pepper, and brown on all sides. Remove the lamb and set aside.<\/li>\n\n\n\n<li>In the same pot, add the onion and garlic, cooking until soft. Stir in the cumin, coriander, cinnamon, and cayenne pepper, cooking for another minute until fragrant.<\/li>\n\n\n\n<li>Return the lamb to the pot. Add the orange zest, orange juice, and broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 1.5 to 2 hours, or until the lamb is tender.<\/li>\n\n\n\n<li>Stir in the olives, cilantro, and parsley just before serving.<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li><strong>Prepare the Cauliflower Couscous:<\/strong>\n<ul class=\"wp-block-list\">\n<li>Heat olive oil in a large skillet over medium heat.
