Keto Fusion Spicy Thai Curry Recipe

Ingredients:

For the Curry:

  • 300g of your preferred protein (chicken, tofu, or shrimp)
  • 200ml full-fat coconut milk
  • 1 tbsp red curry paste (ensure no added sugar for keto-friendliness)
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 100g green beans, chopped
  • 1 tsp fish sauce (optional for vegetarian/vegan)
  • 1 tbsp coconut oil
  • Fresh Thai basil leaves
  • Fresh cilantro leaves for garnish
  • 1 lime, juice and zest
  • Salt and pepper to taste

For the Fusion Twist:

  • 1 tsp turmeric powder
  • 1 tsp paprika
  • 1 tsp cumin seeds

Instructions:

  1. Preparation:
  • If using chicken or shrimp, season it with salt, pepper, and lime zest.
  • If using tofu, press it to remove excess water, then season.

  • Stir in the Thai basil and simmer for an additional 2 minutes.

  • Check the seasoning. Add salt, pepper, and lime juice to taste.
  • Once the curry is cooked to your liking and the vegetables are crisp, remove from heat.
