Keto Cauliflower “Egg Fried Rice” – Uncle Roger Style

Ingredients:

Instructions:

  1. Cauliflower Rice Preparation:
  • Take off stems and leaves from cauliflower and chop it into chunks.
  • Use food processor or manual grater, turn the cauliflower until it looks like rice. If you’re lazy, maybe just buy pre-riced, but remember, Uncle Roger always say: fresh is best!
  1. “Rice” Cooking Time:
  • In a big wok (always use wok, gives better taste!), pour in 15ml of sesame oil and heat it up.
  • Toss in riced cauliflower. Give it a good stir until it’s slightly crispy and looks golden brown (maybe 5-7 minutes). Scoop out and keep aside.
  1. Time for Veggies:
  • In the same wok, splash another 15ml of oil.
  • Throw in onions and garlic. Stir until the onion looks see-through.
  • Toss in the carrots and peas. Stir them around until they look happy and cooked.
  1. Eggs, the Star:
  • Move veggies to the side and pour whisked eggs on the other. Wait a moment, then stir them good until fully cooked. No wet egg, haiyaa!

  • Bring back cauliflower rice to the wok party.
