Ingredients:

  1. For the crust:
  • 1 medium-sized cauliflower head, florets removed
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup mozzarella cheese, grated
  • 1/4 teaspoon salt
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1 large egg
  1. For the toppings:
  • 1/4 cup sugar-free marinara or pizza sauce
  • 1 cup mozzarella cheese, grated
  • Optional toppings: pepperoni slices, bell peppers, olives, mushrooms, etc. (adjust according to your keto macros)

Instructions:

  1. Prepare the Cauliflower:
  • Pulse the cauliflower florets in a food processor until they resemble rice-like grains.
  • Transfer the processed cauliflower to a microwave-safe bowl and microwave for about 4-5 minutes. Let it cool for a few minutes.
  1. Squeeze Out Moisture:
  • Once the cauliflower is cool enough to handle, place it in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible. This step is crucial to getting a crispy crust!
  1. Mix & Shape the Crust:
  • Transfer the squeezed cauliflower to a mixing bowl. Add Parmesan, mozzarella, salt, basil, oregano, garlic powder, and egg. Mix until it forms a dough-like consistency.
  • Preheat your oven to 425°F (220°C). Place a piece of parchment paper on a baking sheet or pizza stone.
  • Spread the cauliflower mixture onto the parchment paper, shaping it into a circle, and gently flatten to create your desired crust thickness.

  • Bake in the preheated oven for about 10-12 minutes or until the crust turns golden brown.
  1. Add Toppings:
  • Once the crust is golden, remove it from the oven and spread the marinara sauce over the crust. Sprinkle mozzarella cheese and add your desired toppings.
