Keto Lemon Garlic Butter Shrimp and Asparagus on a Shichirin Grill

Ingredients:

  • 400g large shrimp, peeled and deveined
  • 300g asparagus, trimmed and cut into 5cm pieces
  • 60g butter, divided
  • 4 cloves garlic, minced
  • 1 lemon, juiced and zested
  • Salt and pepper, to taste
  • 5g red pepper flakes (optional, for added spice)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the Shichirin Grill: Light the charcoal in your shichirin grill and allow it to heat up to medium-high heat.
  2. Prepare the Ingredients: While the grill is heating up, prepare your shrimp and asparagus.
  3. Make Garlic Butter: In a small saucepan over low heat, melt the butter and sauté the garlic until fragrant. Add the lemon zest, juice, and red pepper flakes if using. Set aside.
  4. Grill the Asparagus: Brush the asparagus with some of the garlic butter, season with salt and pepper, and place on the grill. Cook for 3-4 minutes on each side or until tender and slightly charred. Remove and set aside.
  5. Grill the Shrimp: Brush the shrimp with the garlic butter and place on the grill. Cook for 2-3 minutes per side or until pink and slightly charred.
  6. Combine with Asparagus: In a large bowl, toss the grilled shrimp and asparagus with the remaining garlic butter sauce until well-coated.
  7. Garnish and Serve: Sprinkle with fresh parsley and serve immediately.
  8. Enjoy! Pair with a side salad or some cauliflower rice if desired.
